How would you go about making an updo like either of these two for shoulder length hair

I would start by using a larger curling iron and curl all of the hair. then start pinning the hair in the back of the head in the nape area and until all the hair is pinned back and the desired shape is achieved. Good luck and have a bottle of hairspray handy to hold short pieces in place.
